I think that's a great idea! I have thought about doing the same thing. So much stuff to capture and it's hard to do with a point and shoot camera while you're driving. The only problem with mounting a camera inside I find is that I don't like the chatter from the occupants (most of it, anyways ;) ), and that you don't get to hear the motor as well and the tires spinning on the rocks.
